Exploring the Delights of Arabic Harees

Harees, also spelled Hareesa or Jareesh, is a traditional Arabic dish that has been enjoyed for centuries across the Middle East and North Africa. It holds a special place in the culinary traditions of countries like Saudi Arabia, Yemen, Kuwait, Qatar, Bahrain, and the UAE. This hearty dish is particularly popular during the holy month of Ramadan and on special occasions like weddings and celebrations.

Ingredients

The ingredients for Harees are simple but flavorful, typically including:

  • Whole Wheat or Barley: The primary ingredient is whole wheat or barley, which is soaked overnight.
  • Meat: Traditionally, lamb or chicken is used, although variations with beef or even vegetarian versions can be found.
  • Onions: Onions are often sautéed to add depth to the dish.
  • Spices: Common spices include cinnamon, cardamom, and sometimes saffron, adding warmth and aroma to the dish.
  • Ghee or Clarified Butter: This is used for cooking and enhances the richness of the dish.
  • Salt: To taste.

Preparation

  • Soaking the Grain: The whole wheat or barley is soaked overnight to soften it, making it easier to cook.
  • Cooking the Meat: The meat is cooked separately until tender, often in a pot with water and spices until it can be easily shredded.
  • Cooking the Grain: The soaked wheat or barley is then cooked in water until it reaches a porridge-like consistency. This can take several hours and may require occasional stirring to prevent sticking.
  • Combining Meat and Grain: Once both the meat and grain are cooked, they are combined together. The meat is usually shredded or finely chopped and then mixed into the cooked wheat or barley.
  • Seasoning: The dish is seasoned with salt and spices according to taste. Ghee or clarified butter may also be added at this stage for extra richness.
  • Serving: Harees is traditionally served hot, often garnished with fried onions, chopped parsley, or a drizzle of olive oil.

Variations

While the basic recipe for Harees remains consistent across regions, there are variations in seasoning and preparation methods. Some regions may add garlic or ginger for extra flavor, while others may incorporate tomatoes or tomato paste for a tangy twist. In some areas, Harees is served with a side of yogurt or a squeeze of lemon juice for brightness.

Emirati traditional dish Harees is now an ‘intangible heritage’ on Unesco Representative List of Intangible Cultural Heritage

Cultural Significance

Harees holds cultural significance beyond its role as a delicious dish. It is often associated with hospitality and generosity, with families and communities coming together to prepare and share it during festive occasions. Additionally, its popularity during Ramadan is due in part to its nutritional value and ability to provide sustenance to those fasting during the day.

In conclusion, Harees is more than just a meal; it’s a symbol of tradition, community, and the rich culinary heritage of the Arab world. Its simple yet hearty ingredients and comforting flavors continue to make it a beloved dish for generations.
